For meeting roasting, broiling, and baking needs, this pan is a virtual acrobat. Its heavyweight construction includes steel rods that are fitted (invisibly) under the outer lip of the pan, so the pan won't warp, even under the weight of a 23-pound, granddaddy-of-them-all turkey. On a similar note, the sturdy 18/10 stainless-steel handles are riveted securely in place, making it easy to lift the turkey-laden pan out of the oven with confidence and relative ease. At 17-1/2 by 12 by 3 inches, the pan is big enough for the above-mentioned üaut;ber-turkey, three good-sized steaks, or an acre of macaroni-and-cheese. Both the pan and the wire rack that's included are coated with a premium Silverstone nonstick finish, so delicate fish steaks (and chocolate cakes) emerge unscathed. Though the rack is a nice bonus feature--heavy-duty and complete with handles for easy removal--serious turkey chefs may want to further accessorize with an angled rack, one that cradles the bird and holds it a bit higher for optimal browning.
